Tuna Tiradito NikkeiChef Ysaac Sanchez brilliantly showcases the influence of Japanese culture on Peruvian cuisine with his tuna tiradito Nikkei. Sliced like sushi rather than diced like ceviche, the tiradito looks and tastes like a tiny work of art. It’s a study in thoughtful contrasts: the deep-purple, raw tuna against the crisp pink watermelon and the sweetness of the melon balancing the tangy “leche de tigre” sauce of lime juice, ginger and yellow peppers.
