Top Chef: Brian KnechtIn the Sarasota County Technical Institute’s gleaming new facility on Beneva Road, Brian Knecht presides over culinary classes for both high school students and adults, in either a two-year program earning college credits or a three-year apprenticeship program sponsored by the American Culinary Federation. “It gives them a real-world experience in a kitchen environment,” says Knecht, a former executive chef at Sarasota Memorial Hospital and Café of the Arts Restaurant.
