CAFÉ AMERICANO’S SAUTÉED WILD MUSHROOMSWhile the Italian name of this appetizer—funghi misti selvatici—might be a mouthful, this delicate dish of sautéed wild mushrooms, including the tender enoki variety, is as simple as it is delicious. Chef Dino Carta exercises the Italian philosophy of masterful restraint, allowing the rich and flavorful mushrooms to play the starring role. The mushrooms are sautéed , then served with speck and smoked mozzarella cheese. A slight drizzle of olive oil complements the elements and creates just enough moisture to wipe the plate clean with a slice of bread.
