There is, of course, no need to justify the taking of a cocktail before dinner, or even after, if that’s your preference, but it’s a fine thing when having a sundowner simultaneously serves a worthy cause. Such is the case with the Ocean Trust martini at Bonefish Grill. The idea so appeals to me that I am not, for the moment, going to quibble with the current vogue for misnaming every conceivable sort of vodka-based cocktail a martini.

This combination of Absolut Citron, muddled mango and orange juice is a delightful summer cocktail, cool and refreshing with plenty of fruit zing but not at all sweet. Even if a dollar of its $7.90 price tag weren’t destined for a good cause, I’d still order it.

The bonus is that sales of the drink help out an outfit called Ocean Trust, which builds science, conservation and business partnerships to foster sustainable fisheries via research, education and restoration projects, making Bonefish’s participation a natural.

Ocean Trust and its partners run projects in and along the shores of the Gulf of Mexico, including a current campaign to save the Kemp’s Ridley sea turtle from what not long ago was a precipitous decline. Now, thanks in part to Ocean Trust and its partnership with commercial shrimpers, the 2007 protected nest count exceeded 15,000, and a million hatchlings were released into the Gulf.

So go ahead, order an Ocean Trust martini and toast yourself for choosing an environmentally friendly tipple.
