Hot Dish - June 2011

If the name doesn’t sound tropical enough, the flavor profile of this Hawaiian island dish from chef Shannon Mills certainly will. Try incredibly fresh ahi tuna, diced and tossed with capers, soy sauce and a splash of sesame oil; then add a slight pungent creaminess with house-made guacamole served in a tower with flatbread.

You might consider a double order; it’s that good. But save room for the piña colada cake with white chocolate mousse filling and sweet coconut. Island perfection!.
